Vegetarian Spaghetti Sauce
When you’re looking for ways to eliminate red meat from your diet, serve this spaghetti sauce as a replacement.
Ingredients
2 tablespoons olive oil
2 small onions, chopped
3 cloves garlic, chopped
1 ¼ cups zucchini, sliced
1 tablespoon dried oregano
1 tablespoon dried basil
1 8-ounce can tomato sauce
1 6-ounce can tomato paste
2 medium tomatoes, chopped
1 cup water
Directions
- Heat oil in a medium skillet.
- Sauté onion, garlic and zucchini in oil for five minutes over medium heat.
- Add remaining ingredients and simmer, covered, for 45 minutes.
- Serve over spaghetti.
Yield: 6 servings, ¾ cup per serving.
