Salmon Cakes
More and more these days, you hear about the benefits of omega-3 fatty aids. Fish is a common source for this ingredient, but let’s face it, fish is expensive. Not everyone can afford to buy fresh fish as often as they’d like.
This salmon cake recipe can help the money situation. The salmon cakes are made with canned salmon, which is less expensive but still a good omega-3 fatty acid source.
Ingredients
1 7-½-ounce can pink salmon, drained and flaked
1/3 cup saltine cracker crumbs
1 egg, slightly beaten
2 tablespoons chopped onion
2 tablespoons milk
1 tablespoon lemon juice
2 tablespoons vegetable oil
Directions
1. In a medium bowl, combine all ingredients except oil and mix well.
2. Shape into four patties.
3. Add oil to a skillet and sauté patties on both sides until golden brown and cooked through.
Serve with a salad and some brown rice to round out the meal.
