Corn and Zucchini Combo
Yield: 4 servings, about ½ cup each
Ingredients
1 Teaspoon Margarine
½ Cup Onion, diced
1 ½ Cups Zucchini squash, sliced 1/8-inch thick
1 ½ Cups Frozen whole kernel corn
¼ Teaspoon Basil leaves
1/8 Teaspoon Oregano leaves
1/8 Teaspoon Pepper
Directions
- Melt margarine in frypan over low heat.
- Add onion; cook 2 minutes.
- Add zucchini, cover and cook 5 minutes. Stir occasionally.
- Add corn and seasonings. Cover and cook over low heat 5 minutes or until corn is done. Stir as needed.
