Whole Wheat Cornmeal Muffins
Yield: 8 muffins, Serving Size= 1 muffin
Ingredients
2/3 cup yellow cornmeal
2/3 cup whole wheat flour
1 tablespoon sugar
2 teaspoons baking powder
1/8 teaspoon salt
2/3 cup skim milk
1 each egg, beaten
2 tablespoons canola oil
Directions
- Preheat Oven to 400 F.
- Grease 8 muffin tins or use paper liners
- Mix dry ingredients thoroughly
- Mix milk, egg, and oil. Add to dry ingredients. Stir until dry ingredients are barely moistened, Batter will be lumpy.
- Fill muffin tins 2/3 full.
- Bake until lightly browned, about 20 minutes.
Each Serving provides:
2 servings from the bread group per muffin
